I love guacamole. I love it! I often just make a giant batch, buy some tortilla chips and eat it for a meal. It’s an awesome appetizer that is actually pretty healthy. I mean, sure, the avocados have a lot of fat in their chubby little bodies but it’s good fat. Or…you know…whatever.
Regardless, guacamole is delicious and after making it about a thousand times I think I’ve finally got the recipe down to an art. It doesn’t hurt that I can just run down to my local fresh, locally grown fruit and veggie market at get the ingredients for about $5.
5 ripe avocados (squeeze them and there should be a little give, but don’t squeeze too hard)
1 large tomato
1 small red onion
2 tbls fresh, chopped cilantro
2 lemons or limes, juiced
3 cloves of garlic, minced
Salt and pepper to taste
First, peel and pit your avocados. This is easy. Cut the avocado in half around the pit, leaving the pit in one side of the avocado. Scoop the fruit out of the side without the pit. Using a sharp knife, whack the pit with the edge and twist. The pit will pop right out. (If you’re not going to serve the guacamole immediately, save the pits. You can put them in the container with the guac and they will help keep it from browning. It’s a miracle!)
Once you’ve scooped all your avocados into a bowl, mash them up good with a fork.
Dice the tomato and onion and add them to the mix. Then add the remaining ingredients (cilantro, lemon juice, garlic, salt and pepper). Mix it all together well. You’re done! Now you can stuff your face with guacamole! Or save it for later. Serve it with tortilla chips. Duh.
